Laborum, “from our work”, is our emblematic line. It is our search for the genuine expression of Cafayate.

Laborum is the varietal expression of Cafayate.

It is the reflection of our work, our care in the vineyard and integration in the winery, which result in these single varietals with a genuine artisanal focus, and offer us the particular experience of wines that express all the character of their origin.

Our varietal makeup showcases the best of the Cafayate terroir, and the line is made up of wines from very low yield (6 tons/hectare) vineyards.

Finca Río Seco: vineyards located at 1.700 mts (5,577 ft) above sea level in Cafayate Valley, Salta.

Structure

Back conduction in VSP System. Low yield vines with a production of 7 tons/ hectare. Age of vineyard: 16 years.

Harvest

2nd week of March. By hand in bins of 20 kg.

Fermentation

Cold pre-fermentative maceration for 6 days at 4 degrees. Alcoholic fermentation time: 15 days with a controlled temperature between 27 and 29 degrees. Post- fermentative maceration of 30 days. Spontaneous malolactic fermentation in barrels.

Aging

New french american oak barrels for 14 months.

Tasting Notes

Eyes: intense red, with violet notes. Bright and expressive.

Nose: scented and well balanced, with lavender and rosemary
and rich, spicy blueberry fruit.

Mouth: sweet and harmonic beginning, middle to high structure due to the firmbut velvety tannins. Long and persistent finish.

Storage: because of its structure, this wine can be storage for 10 years.

Structure

Back conduction in VSP System. Production: 7 tons/ hectare. Vineyard age: 11 years old.

Harvest

1st and 2nd week of February. By hand in bins of 20 kg.

Fermentation

Cold pre-fermentative maceration for 48 hours, at a temperature of 25 ºC. Maceration for 13 days.

Aging

70% in french oak barrels and 30% in ameriacan oak barrels of first uso from 10 to 12 months.

Tasting Notes

Eyes: Intense ruby red, great vivacity, with violet notes.

Nose: Red ripened fruits; plum outstands as a descriptive element. Combine with harmonious wood of french and american oak. A light smoked and toasted smell can be perceived.

Mouth: Intense beginning, middle to high structure, with balanced acidity. Tannins are sweet and round. A harmonious wine with volume on the palate, sturdy.

Storage: Because of its structure this wine can be storage for 10 years.
